HELLO, CEO LIFESTYLE


I have to pinch myself because somedays l cannot get over how crazy-awesome this world is that we live right now....we get to build a business from our phone and laptop while still experiencing the world around us (our families, friends, financial freedom, the list goes on and on). I honestly think our generation and this TIME that we're all in is absolutely The Age of Connection. I believe that the ones that take the "risk" now will be the leaders of tomorrow. The ones that jump off the cliff and allow the parachute of life to open will FEEL the most alive in this lifetime 
.
What was supposed to be 30 minutes turned into nearly an hour and a half of straight up teamwork, accountability and perseverance chat. These fire starter sessions that I only dreamt about are now part of my life! My "job".... ‪#‎mindblown‬ ðŸ’¥

I have some pretty exciting news that I cannot WAIT to share tomorrow! I don't think I'll be able to sleep tonight with the ideas swirling around my mind! ðŸ’«

VEGAN FOR A WEEK // MEAL PLANS PROVIDED








We're going Vegan for a week! Why? Because I watched the documentary, Vegucated and balled my eyes out for a solid hour.

CLEANED UP MINNESOTA WILD RICE SOUP // RAINY DAY LOVE





Ingredients

  • 1 cup uncooked wild rice 
  • 1 cup chopped yellow onion 
  • 1 cup diced carrots (3 medium)
  • 1 cup diced celery (3 stalks) Organic*
  • 3 Tbsp unsalted butter (grass fed cow butter)
  • 2 clove garlic, minced
  • 1 package of sliced mushrooms 
  • 4 cups low-sodium chicken broth (avoid the can and go for this carton version)
  • 1/4 tsp of each dried thyme
  • 2 sprigs of rosemary (or more depending on taste)
  • Pink salt and ground black pepper
  • 1 lb boneless skinless chicken breasts halves (free range and antibiotic free)
  • 2 Tbsp quiona flour
  • 1 1/2 cups unsweetened almond milk
  • 1 carton of cream of chicken (avoid the can and go for carton - Pacific carries a great brand)

Directions

Prepare rice according to directions listed on package and set aside.

Halfway through the rice cooking, in a separate large pot, melt 1 tablespoon of butter over medium heat. Add onion, carrots and celery and saute until slightly tender, about 3-4 minutes, adding in garlic during last 30 seconds of sauteing. Add low sodium chicken broth, thyme, rosemary and season with pink salt and black pepper to taste. Add mushrooms now. Increase heat to medium-high, add chicken and bring mixture to a boil. Cover pot with lid and allow mixture to boil 12 - 15 minutes, or until chicken is cooked through (rotating chicken to opposite side once during cooking for thicker chicken breasts - if they don't fully immerse in broth). Remove chicken and set aside on cutting board to cool 5 minutes then shred into small bite size pieces. Meanwhile reduce heat to low and add cooked rice. Add shredded chicken back to the soup.

In a separate medium saucepan, melt remaining butter over medium heat. Add flour and cook 1 1/2 minutes, whisking constantly. Then, while whisking vigorously, slowly pour milk into butter/flour mixture. Add the package of cream of chicken. Cook mixture, stirring constantly until it thickens. Add milk mixture to soup mixture in pot and cook about 5 minutes longer, or until soup is thickened (at this point, you can simmer the soup for a longer period of time if you want the rice to soften more, just cover with lid first and stir occasionally. You can also add what's left in the remaining can of chicken broth). 

Serve warm and if you love rosemary like me -- add a couple more sprigs to the top!

FLOWER CROWNS + FUN + FITNESS // WEEKEND EDITION


Weekends to me always meant freedom for self expression -- time to bask in what life is really about. 


FRIYAY

Friday morning was spent downtown meeting with 4 gals from Stitch Fix to see about possible opportunities in the Minneapolis area. Pretty exciting stuff! However, the hardest part about meeting with them was deciding what to wear! As you probably know, -everything- on their website is adorable! How could my clothes live up?!

The meeting was ultra formal so I ended up picking the dress + jacket on the right. Added some gold jewelry to bring out the BOHO side that I always keep near and dear. Light pink shows to complement the navy jacket (sorry, forgot to take a whole body pic!) It actually pulled off pretty well. 



Both dresses were found at H&M for under $35. Score!

The rest of the afternoon was spent with my incredible team, The Motivated Mavens. Checking in online to see everyone's meal posts, fitness accountability and much more! I love my job. 

Later on Friday evening I was invited to an event called, Flowers in her Hair. It was a networking social event for photographers, local artisans and they even had a little one-woman acoustic set up! 







Made new friends and an adorable flower crown! 





So fun!! Must remember that theme for upcoming events! 

They even had a cotton candy machine - for reals. It was BOHO paradise. 

Capped off the night at my husbands gig,  LTD Brewery to see family + friends!

SATURDAY

Was entirely slow moving and belly satisfying. I found a couple Pinterest recipes for Minnesota wild rice soup and decided to take my own spin on it. Subbing out half & half for almond milk and bleached flour for quinoa flour -- saved calories! And...it turned out incredibly good! Hubby approved. Took some time to create this weeks clean eating guide along with grocery shopping list for my Mavens.  Excited to see which rockstars will give it all they have over the next 7 Day Clean Eating Challenge! Shall be fun! 

SUNDAY



Sunday was this. Perfect perfect.  Found out there's a Starbucks 2 miles from our house! Shit! So, hopped on my bike and made my way over there for breakfast and coffee.  Gathered as much coffee shop vibes as I could before making the trek back home. 

Can we just take a moment to admire how beautiful this new handbag/clutch/macbook purse is? I purchased it at the Flowers in her Hair party and I'm in LOVE!



Besides being the cutest thing on earth -- it was created in Ecuador. I was intrigued and wanted to know more. Here's the the owner told me...
