SEANA'S COCONUT + BANANA +POMEGRANATE ACAI BOWL

ACAI BOWLS are PACKED with antioxidants, nutrients, probiotics and major vitamins. This is a delicious breakfast you can make while unwinding with a cup of tea... and feel GOOD about what you're giving your body.
For the ACAI BOWL, you want to reach a thick concistency, try going with frozen fruit from the options below included in the puree. In addition, fresh fruit works best for toppings! 
INGREDIENTS:
ACAI PURÉE
  • 1/2 small banana
  • 1 (3.5-oz) pack of frozen unsweetened acai berry pulp (found at Whole Foods)
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen blueberries
  • 1/2 cup unsweetened vanilla almond milk
TOPPINGS
  • 1/2 small banana, sliced
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup of pomegranate seeds
  • dash of chia seeds
  • dash of cinnamon 
ADDITIONAL TOPPING IDEAS (...options are endless!)
  • 1/2 kiwi, peeled and sliced or chopped
  • 1/4 cup blueberries
  • 1/4 cup strawberries, sliced
  • 1/4 cup peeled and chopped pineapple or mango, optional 
  • 1/4 cup granola, optional
  • Drizzle of raw honey, optional
INSTRUCTIONS:
  1. Prepare acai purée: In a blender, add banana, acai pulp, strawberries, blueberries and a splash of almond milk. Take your time here blending and adding milk slowly. When ingredients have mostly come together and all of milk has been added, blend on high for 15 to 20 seconds more until you reach the puree consistency.
  2. Add toppings: Pour acai purée into a bowl and arrange toppings to your desire. Add a sprinkle of cinnamon or honey to top off your creation!
