CLEANED UP ZUPPA TOSCANA


INGREDIENTS
  • 1 lb. ground pork sausage (nitrate free)
  • 1 cup onion, diced
  • 8 slices bacon, diced (nitrate free)
  • 1 package of sliced mushrooms (baby bellas are best)
  • 1¼ t. garlic, minced
  • 4 cups chicken broth (low sodium - you'll get enough salt with the bacon)
  • 1 cup baby yellow potatoes, cut into bite sized pieces
  • 1/2 cup of water
  • 2 c. organic kale, thinly sliced
  • 1 can of coconut full fat milk

INSTRUCTIONS
  1. Cook the sausage in large skillet and brown over medium heat.
  2. Drain and set aside.
  3. Place your onion and bacon to the skillet and saute over medium heat until the onions are translucent.
  4. Place sausage, onions, bacon and garlic in your crock pot along with remaining ingredients
  5. Cook on low for 4-6 hours
  6. Add the chopped kale and coconut milk to your crock pot and stir before serving

Enjoy this cleaned up version of Zuppa Toscana! It was a home run in our house!
