INGREDIENTS
- 1 lb. ground pork sausage (nitrate free)
- 1 cup onion, diced
- 8 slices bacon, diced (nitrate free)
- 1 package of sliced mushrooms (baby bellas are best)
- 1¼ t. garlic, minced
- 4 cups chicken broth (low sodium - you'll get enough salt with the bacon)
- 1 cup baby yellow potatoes, cut into bite sized pieces
- 1/2 cup of water
- 2 c. organic kale, thinly sliced
- 1 can of coconut full fat milk
INSTRUCTIONS
- Cook the sausage in large skillet and brown over medium heat.
- Drain and set aside.
- Place your onion and bacon to the skillet and saute over medium heat until the onions are translucent.
- Place sausage, onions, bacon and garlic in your crock pot along with remaining ingredients
- Cook on low for 4-6 hours
- Add the chopped kale and coconut milk to your crock pot and stir before serving
Enjoy this cleaned up version of Zuppa Toscana! It was a home run in our house!
